The clocks have turned back and Halloween is in a couple days! I guess it’s safe to say we are on our way into the winter season. Halloween isn’t something we really get into but I still like to carve a pumpkin and put on a film. This year I thought I’d do a bake as well. Something easy and simple that anyone else can do!
With Autumn in full spring I really wanted to do another bake with Apples this year. I did do one a couple of years ago when I first started this blog for an Apple Crumble Cake. If you fancy trying that here’s the link! Anyway, I found this recipe for a really simple cake which just requires a quick mix of ingredients and a 30 min bake. The cake is a vanilla sponge with apple pieces finished with a sugary cinnamon syrup for the top.
This must be my first post in about a month! Unfortunately, I have been traveling pretty much every week for work for the past couple of months, which means any free time I do have I need to sort my life out, catch up with Chris or sleep. But finally, this weekend I felt I had time to do what I love best- bake!
I do have a confession to make…this did not turn out how I wanted it to. But, that was down to my own skill set rather than the recipe. I really need to work on icing layered cakes. I have never been able to get it right but practice makes perfect! I’ve decided to do more research on how to nail it.Hopefully, with some help from Pinterest and youtube, I’ll be on my way! Today was my last day of work before I am on holiday for a week- hooray! I think my excitement and positive energy went into this bake as I’m actually quite proud of myself today. For once the icing wasn’t a complete mess and it turned out sooo much better than I thought. I got to try out my new bundt tin too! This cake is super fruity, spongey and tangy, and so delicious.
