Finally, January is over! Like most people, I jumped on the health bandwagon after eating my bodyweight over Christmas. Unfortunately, that did mean putting a pause on my hobby and blog for a while whilst I threw myself into healthy eating. But, you’ve got to treat yourself sometimes! What better way to kick start the year than with chocolate! In keeping with the wellbeing theme too, these Chocolate Mousse pots are still reasonable in terms of calories and sugar- it’s a win, win! Perfect for a weekend treat or Valentines!
It’s Christmas time! My favourite time of the year. The tree is up, the house is decorating, I’m now just waiting to finish work and enjoy the relaxation! One of the best things about Christmas is not just the excuse to drink an extra gin but also to eat yummy food which only comes around this time of year! I wanted to get baking some festive foods and try something different from what I’ve done before. Stollen Muffins sounded like a delicious, easy, weekend bake to get into the Christmas mood!
Recently I’ve really enjoyed making cupcakes and with little to do this weekend, I thought I’d bake again. I’ve always wanted to give biscuit themed cupcakes a go. I always think they look aesthetically god every time! I chose Bourbon biscuit as I have a full proof chocolate cupcakes recipe and I know my team at work love a Bourbon!
This weekend I celebrated my best friend’s 23rd Birthday in Birmingham. It’s something we do pretty much every year in Bham without fail, and it’s always a great night. Instead of bringing a bottle I thought I would bake something instead. This is something which I think is a really good idea/thought if you ever had an event or Birthday. It’s something a little bit different and is fun to make as well!
As I’ve probably mentioned before- I love custard! It’s possibly one of my favourite flavours/ingredient in baking. It is far more versatile than people believe it to be as well. From Creme Anglaise (Egg Custard) to the delicate Creme Patissiere, to your Gran’s thick homemade custard for Sunday dessert. You just can’t beat any of them. This week’s bake is Pasteis De Nata, which translated to small Portuguese Custard Tarts which uses egg custard. They’re little bites of joy which no one can turn down…
Day by day I am feeling more and more Autumnal. Days are feeling shorter and leaves will soon be falling. If I’m honest, I am a little excited from a cooking/baking point of view for the change in the seasons. I find it a lot easier to get inspiration for baking when the weather isn’t scorching hot. As we have seen in Bake Off this year as well, it makes baking a lot easier when the weather is cooler. Either way, I am excited to share some winter warmers with you. For now, this week’s delicious bake is a moist, chocolatey cookie, with chunks of Malteaser and white chocolate chips thrown in for good measure…
This week’s bake is a little fiddly but 100% worth the effort. I tried and tested the recipe out at work and it is safe to say the cakes were well received and the reviews were even better! Be prepared to get sticky, have cake and caramel everywhere, but finish your baking with a deliciously rich, caramel filled cupcakes no one could turn down.
