I am currently struggling to find things to bake during lock down, not only because of the flour shortage, but because unfortunately my boyfriend isn’t a massive fan of cake (I promise its not my baking!) Another post, another cheesecake! I am a big fan of a no bake cheesecake and it is always my ‘go to’ if I’m hosting. It’s so easy to make but soo delicious. This time it’s a Malteaser version perfect for any chocolate lover!
The clocks have turned back and Halloween is in a couple days! I guess it’s safe to say we are on our way into the winter season. Halloween isn’t something we really get into but I still like to carve a pumpkin and put on a film. This year I thought I’d do a bake as well. Something easy and simple that anyone else can do!
With Autumn in full spring I really wanted to do another bake with Apples this year. I did do one a couple of years ago when I first started this blog for an Apple Crumble Cake. If you fancy trying that here’s the link! Anyway, I found this recipe for a really simple cake which just requires a quick mix of ingredients and a 30 min bake. The cake is a vanilla sponge with apple pieces finished with a sugary cinnamon syrup for the top.
The mornings are darker, the days feel shorter and the weather is definitely colder! It finally feels as though summer is over and although that means goodbye to hot weather and the sun, there is still plenty to love about Autumn and Winter…and the food is one! I was originally looking for a recipe with Apples however then felt inspired to try something different with Aumtumnal spices and Pumpkin. It’s the month of Halloween after all.
Sometimes you can’t beat a classic. Throughout all the years I’ve baked I’ve actually never made a classic Victoria Sponge so it was about time I gave it a go. It’s a great recipe if you’re looking for somewhere to start with baking. It’s so easy, simple and made from simple ingredients which won’t build up too much of an expense. It’s also a fantastic addition to a cup of tea or a glass of fizz!
Finally, January is over! Like most people, I jumped on the health bandwagon after eating my bodyweight over Christmas. Unfortunately, that did mean putting a pause on my hobby and blog for a while whilst I threw myself into healthy eating. But, you’ve got to treat yourself sometimes! What better way to kick start the year than with chocolate! In keeping with the wellbeing theme too, these Chocolate Mousse pots are still reasonable in terms of calories and sugar- it’s a win, win! Perfect for a weekend treat or Valentines!
If you haven’t manage to guess already from previous bakes, I love using pecans in baking. This week is yet another delicious treat packed full of pecans with a gooey, sweet filling and biscuity type base. These are hands down one of my favourite bakes to date. I’ve had to hold back on scoffing them down all weekend! If I could recommend anyone to give any of my recipes ago, this is definitely one!
