Finally, January is over! Like most people, I jumped on the health bandwagon after eating my bodyweight over Christmas. Unfortunately, that did mean putting a pause on my hobby and blog for a while whilst I threw myself into healthy eating. But, you’ve got to treat yourself sometimes! What better way to kick start the year than with chocolate! In keeping with the wellbeing theme too, these Chocolate Mousse pots are still reasonable in terms of calories and sugar- it’s a win, win! Perfect for a weekend treat or Valentines!
If you haven’t manage to guess already from previous bakes, I love using pecans in baking. This week is yet another delicious treat packed full of pecans with a gooey, sweet filling and biscuity type base. These are hands down one of my favourite bakes to date. I’ve had to hold back on scoffing them down all weekend! If I could recommend anyone to give any of my recipes ago, this is definitely one!
Chocolate Fondants are irresistible chocolate puddings with melted molten chocolate in the middle which are usually drizzled with a bit of cream or some ice cream. Most restaurants tend to have them on their dessert menu and Guu makes a delicious version of them too. Nonetheless, making them from scratch at home is far more satisfying and in fact cheaper. They taste even better than ones you buy and have the added value of knowing you made them yourself.
Last weekend I went to London with a few of the girls for food, drinks, more food, and even more drinks. We went to a lovely little cake shop called Crumbs and Doilies (review will be up next week). From just stepping into the shop and admiring all the beautifully decorate cupcakes I had a little bit of inspiration to do cupcakes. Once I took home the cakes from the shop and tried them by inspiration grew! The Nutella Cupcakes I had from there was amazing. So good that I wanted more. So I decided that would be this weeks bake.
I’m back to the bundt tin! Yes, after the last time I used it I was so satisfied with the results I wanted to give it another go. The complete opposite of my last post, this cake is full of sugar and butter, but, is cake really cake without all the calories? Who cares anyway, a little treat on the weekend never hurt anyone! I also wanted to do something which sort of incorporated my recent holiday in Austria/Germany, so I found a streusel cake! This bake is a delicious mix of maple, cinnamon and nutty crumble. This post is a tad late this week as I was away skiing in Austria all of last week! The scenery was beautiful and I eventually learned to ski! Me and my boyfriend love German food and as we were was on the border there was plenty of it, as well as plenty of beer. So back to reality….and back to trying to eat well (uh oh!). Today was my last day of work before I am on holiday for a week- hooray! I think my excitement and positive energy went into this bake as I’m actually quite proud of myself today. For once the icing wasn’t a complete mess and it turned out sooo much better than I thought. I got to try out my new bundt tin too! This cake is super fruity, spongey and tangy, and so delicious.
