I made this Chocolate Fudge Cake for a Birthday during lock down. More and more I am enjoying making tiered cakes and getting the hang of them again. I especially loved making this one as it had been a while since I had the opportunity to make a big cake (that I didn’t have to try eat by myself!) This recipe of a classic celebration cake is to die for, and tastes amazing!
Last weekend I was lucky enough to get to bake for my friend’s Baby Shower! I was feeling a little nervous, especially as I was trying something new and something I had invented in my head a little. Despite this the cakes were a success and I was really happy with how they turned out! I was trying to recreate a Victoria Sponge in a cupcake- a springy vanilla sponge with a raspberry jam centre, topped with a vanilla buttercream. Perfect accompanied with a cup of tea!
Even amongst a very busy week, I managed to fit in a quick bake to be used as a birthday cake this weekend. It was my sister in law’s hen do, but, it was also her and one of the hens’ birthday. Of course, you can’t have a birthday without any birthday cake! I manage to bake this within an hour and a bit on a Thursday night- which goes to show how easy this recipe is! With a few finishing touches and decorations this cake turns from something which looks super simple, to something which looks gorgeous!

This week’s bake is a little fiddly but 100% worth the effort. I tried and tested the recipe out at work and it is safe to say the cakes were well received and the reviews were even better! Be prepared to get sticky, have cake and caramel everywhere, but finish your baking with a deliciously rich, caramel filled cupcakes no one could turn down.

I have walked past Vanilla Tree so many times and been tempted by the bagel menu every time, desperate to try them. I finally did, and it’s safe to say it is now a favourite find of mine! With the British summertime surprising us all this year with the glorious weather. BBQs have been part of the weekend for nearly everyone I know. It’s a great excuse to get people round and eat your body weight in food, and an even better excuse to make a dessert. This White Chocolate Cheesecake is a big winner and has the best mix of a creamy, rich, chocolatey dessert with the addition of sweet summer berries.
Chocolate Fondants are irresistible chocolate puddings with melted molten chocolate in the middle which are usually drizzled with a bit of cream or some ice cream. Most restaurants tend to have them on their dessert menu and Guu makes a delicious version of them too. Nonetheless, making them from scratch at home is far more satisfying and in fact cheaper. They taste even better than ones you buy and have the added value of knowing you made them yourself.

This week I had my first request from someone to make a cake for an event. It is for one of my close friend’s Mum’s birthday and is the first time someone other than my Mum has asked me to do a bake for them. No pressure! The challenge was that it had to be gluten-free as well. This is something I have never done before but I took it on, and the results were just what I wanted!
