Sometimes you can’t beat a classic. Throughout all the years I’ve baked I’ve actually never made a classic Victoria Sponge so it was about time I gave it a go. It’s a great recipe if you’re looking for somewhere to start with baking. It’s so easy, simple and made from simple ingredients which won’t build up too much of an expense. It’s also a fantastic addition to a cup of tea or a glass of fizz!
Even amongst a very busy week, I managed to fit in a quick bake to be used as a birthday cake this weekend. It was my sister in law’s hen do, but, it was also her and one of the hens’ birthday. Of course, you can’t have a birthday without any birthday cake! I manage to bake this within an hour and a bit on a Thursday night- which goes to show how easy this recipe is! With a few finishing touches and decorations this cake turns from something which looks super simple, to something which looks gorgeous!
This year I’ve been cramming in practice wedding cakes wherever I can. I have been asked to do my brother’s wedding cake for the big day in April, which I am both excited and nervous to do! I’ve never done anything like it so have been trying my best to ensure I am ready, and fully equipped to pull it off! This week I made one of the cake tiers for a birthday cake. It was the perfect opportunity to try nail the cake, and in particular, try to get my skills using fondant up to scratch. This weekend I celebrated my best friend’s 23rd Birthday in Birmingham. It’s something we do pretty much every year in Bham without fail, and it’s always a great night. Instead of bringing a bottle I thought I would bake something instead. This is something which I think is a really good idea/thought if you ever had an event or Birthday. It’s something a little bit different and is fun to make as well!
This weeks bake is Red Velvet Cupcakes- something which I personally have never done before. Not only this, but there was another challenge involved for me this week- I had to make 36 of them for my lovely friend’s surprise Birthday. I do have a confession to make…this did not turn out how I wanted it to. But, that was down to my own skill set rather than the recipe. I really need to work on icing layered cakes. I have never been able to get it right but practice makes perfect! I’ve decided to do more research on how to nail it.Hopefully, with some help from Pinterest and youtube, I’ll be on my way!
