I am currently struggling to find things to bake during lock down, not only because of the flour shortage, but because unfortunately my boyfriend isn’t a massive fan of cake (I promise its not my baking!) I could easily eat a cake to myself in a week but its not a habit I want to get into so I am constantly trying to find recipes my boyfriend will eat!

If there is one thing which stays in my mind when I think back to my favourite baked good as a child, I always think of my Gran’s Brownies. They are the talk of my family, always have been, and always will be. I have always wanted to recreate that same amazing Brownie texture and flavour but have always struggled. Even amongst a very busy week, I managed to fit in a quick bake to be used as a birthday cake this weekend. It was my sister in law’s hen do, but, it was also her and one of the hens’ birthday. Of course, you can’t have a birthday without any birthday cake! I manage to bake this within an hour and a bit on a Thursday night- which goes to show how easy this recipe is! With a few finishing touches and decorations this cake turns from something which looks super simple, to something which looks gorgeous!
