Day by day I am feeling more and more Autumnal. Days are feeling shorter and leaves will soon be falling. If I’m honest, I am a little excited from a cooking/baking point of view for the change in the seasons. I find it a lot easier to get inspiration for baking when the weather isn’t scorching hot. As we have seen in Bake Off this year as well, it makes baking a lot easier when the weather is cooler. Either way, I am excited to share some winter warmers with you. For now, this week’s delicious bake is a moist, chocolatey cookie, with chunks of Malteaser and white chocolate chips thrown in for good measure…
This week’s bake is a little fiddly but 100% worth the effort. I tried and tested the recipe out at work and it is safe to say the cakes were well received and the reviews were even better! Be prepared to get sticky, have cake and caramel everywhere, but finish your baking with a deliciously rich, caramel filled cupcakes no one could turn down.
This week’s Coffee Date is back in my favourite town to find an independent coffee shop to relax in. Me and my Mum decided to try out Vanilla Tree in Bedford for a lunch and cakey treat. I have walked past Vanilla Tree so many times and been tempted by the bagel menu every time, desperate to try them. I finally did, and it’s safe to say it is now a favourite find of mine! If you haven’t manage to guess already from previous bakes, I love using pecans in baking. This week is yet another delicious treat packed full of pecans with a gooey, sweet filling and biscuity type base. These are hands down one of my favourite bakes to date. I’ve had to hold back on scoffing them down all weekend! If I could recommend anyone to give any of my recipes ago, this is definitely one!
With the British summertime surprising us all this year with the glorious weather. BBQs have been part of the weekend for nearly everyone I know. It’s a great excuse to get people round and eat your body weight in food, and an even better excuse to make a dessert. This White Chocolate Cheesecake is a big winner and has the best mix of a creamy, rich, chocolatey dessert with the addition of sweet summer berries.
This must be my first post in about a month! Unfortunately, I have been traveling pretty much every week for work for the past couple of months, which means any free time I do have I need to sort my life out, catch up with Chris or sleep. But finally, this weekend I felt I had time to do what I love best- bake!
Chocolate Fondants are irresistible chocolate puddings with melted molten chocolate in the middle which are usually drizzled with a bit of cream or some ice cream. Most restaurants tend to have them on their dessert menu and Guu makes a delicious version of them too. Nonetheless, making them from scratch at home is far more satisfying and in fact cheaper. They taste even better than ones you buy and have the added value of knowing you made them yourself.
