I made this Chocolate Fudge Cake for a Birthday during lock down. More and more I am enjoying making tiered cakes and getting the hang of them again. I especially loved making this one as it had been a while since I had the opportunity to make a big cake (that I didn’t have to try eat by myself!) Cherry Bakewell Tarts

One of my favourite things to eat growing up was always a Bakewell Tart. Me and my best friend would buy a whole box of them and demolish them together. In particular I remember buying a giant one and thinking it was the best thing since sliced bread. For me it’s the almond flavour which does it. I love anything almondy and the sweetness of the jam and icing make for a delicious combo! I finally got round to making my own, and although messy, they turned out great! Eton Mess

We’ve been really lucky with some great spouts of weather recently. With the sun shining I was craving strawberries and cream. I then took it up a level and really fancied tucking into an Eton Mess. I’ve never made merignue before so this was a first for me too! By following this recipe I got it right and it tasted sooo good. All you need is a glass tumbler to serve it in!

Cherry Bakewell Flapjacks

One of my favourite treats is bakewell tarts! I love anything with an almond flavour. To relieve my craving without having to make full bakewell tarts I found a fab recipe for Bakwell flapjacks. These are so easy to make using really simple ingredients as well. It was mostly just mixing everything into one bowl and cooking in the oven. The flapjack is topped with white chocolate which was a great addition too!

Chocolate Eclairs

I am currently struggling to find things to bake during lock down, not only because of the flour shortage, but because unfortunately my boyfriend isn’t a massive fan of cake (I promise its not my baking!) I could easily eat a cake to myself in a week but its not a habit I want to get into so I am constantly trying to find recipes my boyfriend will eat!

Chocolate Eclairs is one of the things he does like so I thought I’d take on the challenge and make some! Choux pastry can be difficult but once you nail it the first time,its not as bad as it sounds. I’ll provide an easy recipe for Eclairs as well as top tips for full proof Choux Pastry!

Egg-less Chocolate Chip Cookies

Another week, another cookie recipe. This week is to help those who can’t find any eggs on the shelves at the minute. These chocolate chip cookies are delicious with a cup of tea and are so quick to make and bake. You can switch up the chocolate chips for something different like M&Ms or maybe you still have some Mini Eggs to get through from Easter! The egg is replaced with milk and oil which sounds gross but you really can’t tell!

I promise the next recipe will not be cookie related, but you have to admit, you cant beat a good cookie!

Flour-less Chocolate Fudge Cookies

One thing which has taken a hit during the Covid-19 pandemic is flour. I don’t know about you but I am finding it impossible to find ANY flour in the shops. I’ve tried every single week and there seems to be no sign of it returning.

This is not only a result of us all using baking to occupy our time now, but also the flour suppliers main customer is usually big bakeries, not the small every day consumer. The flour mills are struggling to keep up with the demand of producing smaller bags of the flour- the flour is there but the capacity for packing the smaller bags is not!

But there is a way around this if you’re desperate to bake or find something to do! These flour-less cookies are honestly sooo good and I think I’d say I’d prefer them over normal ones. They’re super fudgy, light, and easy to make. (These can also be gluten free!)

Chocolate Chip Banana Bread

To follow on from my last post I thought I’d post another recipe anyone can try whilst we’re social distancing. I’ve seen loads of posts on banana bread on social media so thought I’d jump on the hype and give it a go as well! The recipe is great if you’ve got over-ripe bananas left to use up, and avoids them going to waste! The loaf can be made all in one bowl making it so quick and easy to make. It makes for a nice little pick-me-up with a cup of tea!

Vanilla Cupcakes

Life in isolation/social distancing can be incredibly boring. It can be really easy to be unmotivated to do a lot and become really unproductive. Personally, I find this can put me in a really low mood making the challenging time we are in, even more difficult to push through. I’ve taken up a new, creative hobby to try teach myself from online tutorials and books and honestly, it has killed a lot of time and been very therapeutic.

If you’re starting to feel restless, bored, unproductive why not try baking? It’s not as daunting as some people think if you follow all the great recipes and guides that are out there. If this is something you’re toying with why not start here? This is my beginner’s recipe to vanilla cupcakes. This recipe is also great to do with bored kids and you can get as creative as you want with them! By the end you’ll feel a sense off accomplishment and you get to eat. A win win if you ask me!
